Where altitude
becomes flavor

Nariño sits at the southwestern tip of the Colombian Andes — volcanic soils, equatorial light, and cold nights that slow the cherry's development to a point where complexity becomes inevitable.

We source directly from producers in La Unión, Buesaco, Aponte, Pompeya, Belén, and El Carmen. Every lot is traceable, cupped, and offered with full process documentation.

Hybrid Thermodynamic Drying System

Controlled drying.
Engineered for the highlands.

Post-harvest variability is one of the largest sources of quality loss in Colombian specialty coffee. Uncontrolled drying — subject to rain, humidity spikes, and temperature swings — creates inconsistency that no cupping can recover.

Our hybrid thermodynamic system combines solar passive collection with active temperature and humidity control to maintain optimal drying curves regardless of outdoor conditions. The result is measurable, repeatable quality at the farm level.

01
Solar Passive Collection
Polycarbonate and thermal mass panels capture ambient solar energy, pre-heating the drying environment without mechanical energy input.
02
Active Thermodynamic Control
Heat pump technology maintains target temperature and vapor pressure differential with ±0.5°C precision across the drying bed.
03
IoT Monitoring & Logging
Continuous sensor array tracks temperature, relative humidity, and water activity (a_w) at multiple bed depths. Data logged for traceability.
04
Target: a_w ≤ 0.60
Drying terminates at the optimal water activity threshold — eliminating mold risk while preserving volatile aromatic compounds.
